Fruit Tart

Ingredients:
1 easy bake pie crust
1 box of Jello vanilla pudding (banana might be yummy too)
1 apple
3/4 pear
7-8 strawberries- sliced
7-8 mandarin orange pieces
grapes

















Bake pie crust at 450 degrees for 12 minutes while you are mixing up the pudding mix and slicing the fruit.  When it is finished let it cool in the refrigerator before you add the pudding.

















Now the fun part...adding the fruit! Ta da!

2 Hour Delay Day

We are in the midst of our second somewhat major snow storm today.  We are supposed to get 5-9 inches of snow and finish the storm off with freezing rain. All of our local schools are closed...except mine. We are on a 2 hour delay. While I can't complain TOO much, but Dave and I thought we would be off for sure. The only part of a 2 hour delay that is really lousy is that I have my 1st period class (aka the most difficult and wild class) for ONE HOUR! To be honest, all of the schools around my school closed, so we may (hopefully) follow suit.  If I do have school, I will need to leave at 8:45 am to be ready for kids at 10 am. My commute is a solid 30 minutes in good weather, but it is up into the southern Adirondacks so as the elevation goes up so does the snow accumulation!

While I am not a lover of snow in terms of skiing or other outdoor activities, I do love to watch it fall.  Dave and I always remark about the beauty of snow piled on the trees, especially the evergreens.  I also love when I look out on the front yard, and the snow is whole without foot or paw prints. It is a beautiful sight. Sometimes I wonder if I would miss winter if we lived in a warmer place, and I am not sure what my answer would be. My favorite seasons are summer and fall. For the most part, I could do without winter and spring. But on days like today, the world feels safe and sheltered and beautiful.

First Post of 2011

I was a bad girl last night...I consumed just shy of 1700 calories of beverages and I only had 4 drinks. Yikes. The good news is that I grabbed my calendar and the class schedules for our gym and decided to make a plan. I am not one of those neurotic calorie-counting people, but 1700 is a lot. Luckily, I ate light. I weighed in this morning at 147.6. The heaviest I have been is 155, but I would like to be closer to 140. Luckily/unfortunately for me, I have a fairly muscular build and will never be twiggy. In fact, the one time that I was down to 135, I looked terribly gaunt. So instead I linger between a hopeful 140 and an uncomfortable 155. I am not even going to set a weight goal in stone, because honestly, it's not about the scale. It is about being healthy and feeling good.
